Easy Salmon Pasta

Cook your choice of Pasta to your liking.

Sauce

220g Salmon or Trout                                 200mls UHT Cream                 Big tsp Garlic                 Big tsp Butter                                                 tbsp Olive Oil                                                               tbsp Capers (roughly chopped)                  Black Pepper taste

Finely chop one half of the Salmon & cut the other half into strips.  In a non stick pan heat the butter & oil, add garlic, capers and finely chopped Salmon & cook for 2-3 minutes. (should sizzle). Add cream and strips of Salmon & black pepper.  Once it is back to heat remove from stove.  Allow sauce to stand a couple of minutes then serve on top of Pasta.

Optional Garnish

4 or 5 Anchovies         1/2 – 1 cup of bread crumbs

Grind anchovies, add breadcrumbs and mix together with fingers until you can’t tell the anchovies are there to insure a proper mix.
